JACKSON HOLE

Where wilderness meets the grand table

Scroll

Three nights.
Two estates.
Two chefs.

Some places simply shift the light. Jackson Hole shifts the soul.

Uncompromising, vertical, and wild, it is a landscape that demands your full attention. This September, we are taking fifteen members into the heart of this valley, at the precise moment the air turns crisp and the aspens glow gold.

This is not a tour; it is a C3LLAR exploration.

We are merging the raw intensity of the Tetons with the most storied names in winemaking. Forget everything you know about wine travel.

The Soul
of the Tetons

In late September, Jackson Hole stands at the threshold of the seasons. For four days, the valley transforms into a sanctuary where stillness, gold-leafed aspens, and legacy collide.

Jackson Hole is pure verticality. You have felt its power, or you have not.

Three nights to settle into the rhythm of the West. A full concierge service. Fire-lit evenings. The kind of address that makes every departure feel like a loss.

The Culinary
Artistry

An Elite French Duo

A handpicked duo of French culinary masters flying in exclusively to curate an unprecedented gastronomic dialogue between the Old World and the American West.

Rooted in the strict discipline of grand French estates, these chefs specialize in high-end, immersive dining, turning ancestral open-fire methods into a sophisticated art form.

From the refined elegance of our evening gatherings to the rustic chic of our Defender picnics after a morning of fly-fishing, they will choreograph a tailored culinary symphony where world-class wine is the ultimate guide.

THE DEFENDER LUNCH

A vintage Land Rover pulls into a clearing. A whole beast on the rotisserie. Smoke, open sky, and Château Angélus decanted on the tailgate. The duo's most legendary table setting.

Château Angélus

The Estates

Château Angélus

SAINT-ÉMILION · PREMIER GRAND CRU CLASSÉ A

Eight generations of the de Boüard de Laforest family have shaped this hillside since 1782. Today led by Stéphanie de Boüard-Rivoal, Angélus stands as one of only four estates to hold Saint-Émilion's highest distinction. Merlot-dominant, deeply concentrated, with the velvet and gravity of a true icon — a wine that has poured at coronations, summits, and James Bond's table.

Billecart-Salmon

FAMILY MAISON · CHAMPAGNE

Founded in 1818 in Mareuil-sur-Aÿ, Billecart remains one of the very last great Champagne houses still in family hands — seven generations strong. Slow, cold double-fermentation gives their cuvées a signature finesse: chiseled bubbles, saline minerality, an almost weightless elegance. The first glass opened — and often the last to be set down.
